Ron Zimmerman and Carrie Van Dyck, owners of The Herbfarm, announce Executive Chef Jerry Traunfeld will be opening his own restaurant in Seattle in 2008.

Traunfeld, author of two popular books on cooking with herbs, recently traveled to central Asia to research a book on spices. While he did not find the inspiration for his third book, he did return with the idea for a different kind of restaurant. With his 17th anniversary at The Herbfarm coming up this July, Traunfeld decided that as his idea did not fit the kind of dining for which The Herbfarm is known it did present the perfect opportunity to open his own restaurant.

Traunfeld will remain as executive chef at The Herbfarm for at least the duration of the year while he helps Zimmerman and Van Dyck make the smooth transition to new leadership in the kitchen.
