Cap de Menth
2 oz. Capucello
2 oz. milk
1/2 oz. creme de menthe
Pour Capucello and creme de menthe over ice and stir.
4 oz. Capucello
3 oz. orange juice
2 scoops vanilla frozen yogurt or ice cream
Blend ingredients in blender with a handful of crushed ice.
2 egg yolks
2 Tbsp. sugar
2 c. mascarpone cheese
1 1/4 c. Capucello, divided
Two 3-oz. packages ladyfingers
2 Tbsp. cocoa powder
Beat together egg yolks and sugar. Fold in mascarpone and 1/4 cup Capucello.
Dip ladyfingers in remaining Capucello and arrange one layer in bottom of 10" x 7" rectangular pan. Add a layer of cheese mixture, a layer of ladyfingers, and top with cheese mixture. Dust with cocoa and refrigerate. Serves 8.
2/3 c. heavy cream
3 Tbsp. instant espresso granules
Three 3-oz pkgs. mocha-flavored or semisweet chocolate, chopped
4 Tbsp. butter, room temperature
3 Tbsp. Capucello
1/4 c. cocoa powder
In a small saucepan over medium heat, combine cream and espresso granules. Bring to simmer. Remove from heat and whisk in chocolate and butter until mixture is smooth. Blend in Capucello. Transfer to a bowl. Cover and chill at least 4 hours. Roll into quarter-size balls. Just before serving, roll in cocoa powder. Makes about 16 truffles.
