New Year brings big changes to small bakery

bakery changes Rettig Farms Bakery of Woodinville is making some changes for the new year with the introduction of fat-free and sugar-free breads and no-sucrose-added desserts.
   Owner Barbara Beden-Hill offers this explanation. "Spending quiet time at home with a new baby allows plenty of time for thought. More and more often people have been asking us about fat-free and sugar-free items," she said. "The beginning of the year is a good time to introduce them."
   Many people are more concerned about their diet after the holidays, Beden-Hill said. "During my stay at home, we've spent some time working on new recipes with the goal of fat-free and sugar-free foods.," she said. "Our work has been aided by one of our suppliers, who introduced us to an all natural sweetener similar to sorbitol and fructose, which will allow us to make cakes and icing without adding sucrose."
   Rettig has also expanded its repertoire of elegant desserts from the popular Dome Cake to the new Chocolate Oblivion Truffle Torte. The menu also includes the traditional variety of cheesecakes.
   Rettig Farms Bakery is located in the Hollywood Vineyards shopping center, "kitty-corner" from the Hollywood Schoolhouse. It is open Tuesday-Friday 9 a.m.-6 p.m. and Saturday 9 a.m.-4:30 p.m. Call 486-7469 for more information.
