Mix of green and red leafy lettuce, torn into small pieces
1/3 c. chopped nuts, any kind (Carol prefers a combination of pistachios and pecans.)
1 small can drained mandarin oranges, chilled
1/4 c. yellow raisins
1/3 c. crumbled bleu cheese
1/4 c. thinly sliced red onion
Keep all of the above ingredients chilled (except for the yellow raisins), but do not mix together until just prior to serving.
(Make this the day before to enable the flavors to mingle.)
1 pkg. Good Seasons zesty Italian dressing.
Prepare according to directions. Use excellent quality olive oil and either raspberry blackberry or blueberry vinegar. Moments before serving, mix together all salad ingredients and toss with a scant amount of dressing. Serve immediately on chilled salad plates. Garnish with edible flowers aranged with some of the mandarin orange segments. Accompany with hot rosemary rolls.
