Dining In: Marinades and sauces

recipes Spice up your August dinners with a new marinade or sauce.

Leg of Lamb Marinating Sauce
   1/3 c. wine vinegar
   1 c. white dinner wine
   1 c. chicken broth
   2 tsp. dry dill
   1 clove garlic, crushed
   2 Tbsp. onion, grated
   1/4 c. catsup (optional)
   2 Tbsp. brown sugar
   1 tsp. salt
   1/2 tsp. paprika
   1 tsp. soy sauce
   1 tsp. Worcestershire sauce
   1/4 c. vegetable oil
   Combine all ingredients. Marinate boneless, butterflied leg of lamb at least 24 hours. Cook on grill over low heat 30 to 45 minutes. Make gravy from strained marinade and flour and water.

Asian-Style BBQ Sauce
   1/4 c. red wine vinegar
   1/4 c. soy sauce
   1/4 c. brown sugar
   1/2 tsp. sesame oil (optional)
   1/4 tsp. ground ginger
   2 cloves garlic, crushed
   Combine ingredients. Stir to dissolve sugar. Place 1 to 1 1/2 pounds of salmon steaks or filets in a non-metallic container. Add marinade. Cover and refrigerate 1 1/2 hours; turn salmon once. Drain, reserving marinade. Grill, broil or saute salmon over medium-low heat. Baste with marinade as needed. Discard any remaining marinade. Makes 4-6 servings.

Basic Italian Marinade
(For light meats and seafood.)
   2/3 c. olive oil
   1/4 c. white wine
   1 Tbsp. chopped fresh basil
   1 Tbsp. chopped fresh parsley
   1 Tbsp. chopped fresh thyme
   1 Tbsp. grated lemon zest (optional)
   Flavor with minced garlic
   Salt to taste
   Combine all ingredients.

Jerked Chicken Marinade
(A repeat of a favorite.)
   1/2 white onion, chopped
   1 tsp. garlic, minced
   1 tsp. chili powder
   1 tsp. thyme, crushed
   1 tsp. salt
   1 tsp. brown sugar
   1 tsp. allspice, crushed or powder
   1/2 tsp. nutmeg
   1/2 tsp. cinamon
   1 tsp. pepper
   1/4 c. red wine vinegar
   1/4 c. oil (can omit or lessen)
   4 chicken breasts
   Combine marinade ingredients. Marinate chicken all day. Barbecue.

Marinade for Spareribs
   6 Tbsp. soy sauce
   9 Tbsp. hoisin sauce
   4 cloves garlic, minced
   2 slices ginger, minced
   1 c. bouillon, double-strength
   3 Tbsp. sherry
   4 Tbsp. honey
   3 Tbsp. brown sugar
   1 Tbsp. oil
   2 Tbsp. plum jam
   Juice of one lemon
   Combine all ingredients. Marinate spareribs and grill. May also be used for steak, chicken, or shrimp.

Pork Sate
   2 lbs. boneless pork, cut into 1-inch cubes
   1 1/2 c. orange juice
   Juice of one lemon
   3 cloves garlic, minced
   1/2 tsp. sugar
   1 1/2 Tbsp. soy sauce
   Combine marinade ingredients and pour over pork cubes. Marinate for 2 to 4 hours. Thread meat on skewers and barbecues over charcoal for approximately 20 minutes.
   Serve with sauce:
   1 tsp. butter
   2 Tbsp. peanut butter
   1 Tbsp. soy sauce
   1 tsp. dried red bepper, finely crushed
   1/4 c. cream
   In a saucepan, combine all sauce ingredients, except cream. Simmer over low heat for 15 minutes, then stir in cream. Use as a dip for the sate.

Cranberry Grilling Sauce
Sauce base:
   1 16-oz. can jellied cranberry sauce
   1 10-oz. jar apricot preserves
   1/4 c. vinegar
   2 Tbsp. Worcestershire sauce.
Hot seasoning:
   1/4 tsp. cayenne pepper
   1 T tsp. diced canned hot jalapeno peppers
   2 Tbsp. finely chopped onion
   1 Tbsp. finely chopped garlic
   Combine base ingredients with your choice of one hot seasoning in a medium saucepan. Bring to a boil over high heat. Whisk vigorously and frequently. Reduce heat to a low boil. Simmer 10 minutes, whisking occasionally. Cool to room temperature or chill until needed. Use as a grilling sauce for poultry, pork, and beef.

Flank Steak Marinade
(Without oil.)
   1/4 c. red wine vinegar
   1 c. soy sauce
   2 garlic cloves, minced
   1 bay leaf
   1 tsp. sugar
   1 Tbsp. finely chopped onion
   Dash of pepper
   Combine ingredients. Marinate flank steak 4 to 5 hours after scoring meat diagonally. Marinade will keep in refrigerator and can be reused.

Marinades for Breast of Turkey
   1/2 c. oil
   1/2 c. soy sauce
   2 Tbsp. honey
   1 tsp. fresh ginger
   2 tsp. dry mustard
   2 cloves garlic, minced
   Salt and pepper to taste.

   2 c. dry white wine
   1 c. oil
   1 c. soy sauce
   2 tsp. minced garlic

   1/4 c. soy sauce
   Grated rind of 1 lemon
   Juice from one lemon
   Salt and pepper to taste
   Place turkey in one of the above marinades for 12-24 hours. Grill.
