Beat the Brown Bag Lunch Boredom Blues

Want to encourage your little ones to at least sample their sandwiches? Why not name the "Sandwich of the Day."

For a "Batman and Robin," stuff a pita bread with ham and turkey, add chopped apples, mix with low fat mayo and pine nuts.

For a "Pilgrim's Po Boy," spread cream cheese and jellied cranberry sauce on a hoagie bun, the top with sliced turkey.

Surprise your child with an "April's Fool's," Roll up ham and turkey slices (2 or 4 of each), serve on hot dog bun with ketchup, mustard and relish.

For a "Ham n' Goosebumps," serve ham on rye with a mustard-mayo combination. On the side serve red gelatin wit grapes.

Why should kids have all the fun? Grown-ups also enjoy special sandwiches for special events.

For Columbus Day, sail a "Pinta Pita" - golden brown pita pockets stuffed with turkey, chopped lettuce and tomato pieces right into their lunch bags.

On Halloween, the gang could go for a "Ghostbuster," french bread or a soft roll loaded with sliced turkey and melted mozzarella cheese.

For Christmas time, the "Santa Submarine" features Ho Ho Ham, with red, ripe tomato slices and leafy green lettuce served on a soft roll.

   Quick Chocolate Pretzels

1 block (4 oz.) sweet cooking chocolate
12 thin pretzel bows or knots

In a small glass bowl, microwave chocolate at High (100%) for one minute. Stir. Microwave at High for 30 seconds longer, or until chocolate is smooth when stirred.

Drop pretzels into the chocolate one at a time. Using a fork, lift each pretzel from the chocolate, allowing excess to drip off. Place on a waxed paper-lined surface. Let stand firm, 30 minutes or more (time varies depending on room temperature). May be refrigerated to harden, if desired.
